A Little More About Fresca’s Mexican Grill

Conveniently located at the Citadel Outlets’ Food Court by Starbucks Coffee.

Fresca’s was founded in 1991 when Tom Ryder opened the first Fresca’s Mexican Grill in Costa Mesa, California. While relatively small (1,200 sq. ft.) and off the main thoroughfare, the restaurant quickly grew a cult following. It became obvious that food quality and value were most important in developing fiercely loyal customers, critical in the competitive restaurant industry.

We provide better quality and more flavorful food than most fast food restaurant while providing quicker service and lower prices than full-service restaurants. As a result, we have developed intensely loyal followings at our restaurants. Our restaurants reflect an authentic, yet fresh ambiance. They are designed with a contemporary Mexican hamlet feel, self-service fresh salsa bars and exhibition-style cooking which provides a pleasant backdrop to the ordering process. After orders are taken to the counter, food is prepared fresh for each customer and then delivered to the table or picked up at the counter by the customer.

Our approach to food quality and preparation is the single most important aspect of our concept. We purchase only the finest ingredients and meticulously train our cooks to prepare fresh, consistent and well-portioned meals. We offer generous portions for traditional Mexican food items, including tacos, burritos and quesadillas as well as more unusual items such as our Cancun Roll and shrimp tacos. We prepare food in open view of the customers so they are able to see the quality and freshness. Because the health of our customers is important to us, we use no preservatives or animal fat. In addition, all meats are lean, high-quality, hand-trimmed and charbroiled to ensure the healthiest possible product. Our customers notice the difference and this is a significant advantage for us.

Our full menu is conveniently offered from lunch through dinner and may be ordered as dine-in or take-out. Our operating premise is to serve a very high volume of orders per day and we have accomplished that in each of our restaurants. To encourage speed, we provide customers with a clear view of the menu while they are in line so they are ready to order immediately upon reaching the front. We train our cashiers to be fast, efficient and friendly.
